Citric acid

Description

Citric acid food grade E330 is used to regulate acidity, improve taste, and as a preservative. The E330 food additive is particularly widely used in the manufacture of soft drinks and confectionery. In bakeries, citric acid is often used as one of the components of baking powder.

The reaction with baking soda (E500) releases carbon dioxide, which improves the dough’s properties, making it fluffy.
