
Starch is a complex carbohydrate, a polysaccharide, formed during the photosynthesis process in most vegetables and fruits, cereals, and legumes as a reserve accumulating nutrient.
It is a white granular powder, insoluble in cold water. On the other hand, in hot water, starch forms a colloidal solution – a starch paste.
The main properties of starch are its high absorption and digestibility. These properties, as well as the additional properties of this raw material, led to the considerable popularity of starch throughout the food industry.
Nowadays, there are two main types of starch:
Natural starch (native starch) is a natural additive obtained by special processing of vegetables and grains that have starch in them.
Modified starch is a product obtained under industrial conditions by modifying its original properties and making it more suitable for use in higher temperature processes.
